Shrimp & Crawfish Cake Sandwich

Garnish this sandwich with remoulade dressing and avocado. A great sandwich for any day of the week!

INGREDIENTS:

• 1/2 lb. shrimp, peeled and deveined
• 1 lb crawfish tails drained
• 2 Tbsp. minced green onions
• 2 Tbsp. minced red bell pepper
• 2 Tbsp. minced onions
• 3 eggs
• 4 Tbsp. lemon juice
• 2 Tsp. dry mustard
• 2 Tsp. Worcestershire sauce
• 1 Tsp kosher salt
• 1 Tsp Cayenne Pepper
• 4 Tsp. Cajun Seasoning
• Louisiana Fish Fry Hot Sauce to taste
• 2 cups bread crumbs
• 1/4 cup vegetable oil
• Toasted slices of Texas Toast
• Lettuce
• Sliced Avocado
• Louisiana Fish Fry Remoulade Dressing

DIRECTIONS:

1. In food processor, combine shrimp, crawfisfh, green onions, bell pepper and onions.
2. Pulse 2-3 times until seafood is corsely chopped
3. In large mixing bowl whisk eggs, juice, mustard Worcestershire sauce, salt, cayenne, Cajun seasoning and Hot Sauce.
4. Add seafood mixture and breadcrumbs
5. Form into 10 equal balls and flatten into cakes
6. In skillet, heat oil over medium heat and saute cakes until golden brown about 3-5 minutes on each side
7. Serve on toast with lettuce, avocado and remoulade dressing.
