Creole Pecan Party Rounds

Louisiana is the 4th largest pecan growing state in the country. For years chefs have used this local product in many dishes from sweet potato casserole, to pralines, to the one below.

INGREDIENTS:

• 1 lb grated sharp cheddar cheese
• 1 cup butter, softened
• 2 Tbsp Louisiana Fish Fry Cajun Seasoning
• 3 cups flour
• 1 cup chopped pecans

DIRECTIONS:

1. Cream together cheddar cheese and butter with Cajun Seasoning
2. Blend in flour and pecans
3. Roll the dough into logs about 1 1/2 inches in diameter, wrap tightly in plastic wrap and chill
4. Preheat oven to 350
5. Slice dough into 1/4 rounds and bake on cookie sheet for 12-15 minutes
6. Do not brown
